Well, H3X and I are both going to attempt the upgrade tonight. We are both following the video posted by ipodtouchhacker, I will post it below:
Notes before starting:
- Make sure your iPod's auto lock is set to never, to avoid possible trouble.
- Keep iPod running and on springboard through entire process.
I am coming off of my previous jailbroken 1.1.2 installation. I have heard success stories from both 1.1.2 and 1.1.1, so I've decided not to restore unless I have to.
Anyways, here goes.
11:00 PM: Began process.
11:05 PM: iBrickr started.
11:06 PM: Touch verified, process started!
11:08 PM: Downloading 1.1.3 firmware from apple.com through iBrickr.
11:15 PM: Download finished!
11:16 PM: Decrypting and Decompressing firmware.
11:17 PM: Crossing fingers, starting upload of file to iPod.
11:23 PM: Firmware upload completed! Done with iBrickr.
11:24 PM: Package downloaded from Installer, installing...
11:27 PM: iPod is rebooting. :eek:
11:28 PM: Works! Jailbroken 1.1.3!
Not bad, finished everything in just under 30 minutes. Now onto further testing!
11:30 PM: While no 3rd party apps other than Installer appear on my springboard, they are all still installed. I'm going to try uninstalling, and reinstalling some of them.
11:35 PM: All of my apps are uninstalled, now to try and achieve SSH access. Reinstalling BSD subsystem.
12:19 AM: Still no SSH, but I've managed to get all of the 1.1.3 iPhone apps by using this method.

This method is old, better method after the update below. This does still work, however.
1) Im assuming you have a jailbroken ipod touch, so download BSD Subsystem and then OpenSSH.
2) Login to your ipod with Windscp or the mac one with your ip address as host name, root as username, and alpine as password.
3) Go into /System/Library/CoreServices/Springboard.app and rename N45AP.plist to some like N45AP.old.
4) Then change M68AP.plist into N45AP.plist and reboot iPod Touch.
12:34 AM: SSH has been achieved! Stupid me for not seeing Ste wasn't in my source list.
Note: If you are having problems with SSH not uninstalling with the error "Main script execution failed", try this:

1. Installer -> Uninstall -> BSD-Subsystem -> Re-Install (Right Top Corner)
2. Install MobileFinder
3. Install MobileTextEdit
4. In MobileFinder go to ~/Library/Installer and open LocalPackages.plist in MobileTextEdit
5. Find OpenSSH in that file (probably big!) and delete the whole entry of OpenSSH between <dict> and </dict>
6. Install OpenSSH
7. Install NetServices
8. In NetServices start SSH
12:39 AM: Deleted Phone.app and MobileSMS.app, so springboard is looking very close to perfect 1.1.3 Touch.

Update:
There is now a much cleaner and easier way to get a perfect 1.1.3 jailbroken Touch, with the January Update pack.
Instead of the .plist tweak above, which made your Touch think it was an iPhone, there is a different file that can be replaced, that will give you the January Update features (Customizable Home Page, iPhone Apps, etc...) for free.
Follow the guide above through the jailbreak, and instead of replacing the .plist, follow these instructions.
Then go to category Ipodtouchmater install the package called The iPhone 1.1.3 Apps.. and there you go! then install 1.1.3 fix mail if you use the Mail.app.
There you have it. The perfect 1.1.3 jailbroken iPod Touch.
