Some questions about jailbreaking...

I have an iPod Touch 16 GB 1.1.4 and they said that if I want to jailbreak him you need to "upgrade" him to 1.1.1 (?)
But do I still have then google maps and notes and mail?
And is it totally save?

I think he doesn't speak english very well cause he refers as the itouch as him instead of it lol
